Ingredients – Durban Mutton Curry Recipe
500g mutton/lamb
100ml oil
1 bay leaf
3 small cinnamon sticks
1tsp fennel seeds
1 large onion chopped
1 sprig curry leave
2 tsp ginger & garlic paste
2tsp salt
¼ tsp turmeric
2 tbl masala
3 even sized potatoes
3 sprig fresh coriander (chopped dhania)
1 medium tomato

Fresh, unsliced bread

Use water if desired


Heat oil and then add onion, bay leaves and cinnamon sticks and cook until light brown. Add masala, ginger & garlic allow to cook for a few seconds (do not burn masala). Add tomato (when almost cooked stir in meat and allow to sauté). Turn down heat and cover saucepan. Cook for an hour until meat begins to soften, checking occasionally that there is enough water. Add the curry leaves and salt. Add the potatoes and cook on low heat until they are soft and the water reduces into a thick gravy. Garnish with coriander/dhania. Cut the bread into halves or quarters. Scoop out the middle of the bread to form a well in the bread. Add the curry in the bread and enjoy!
