1 whole chicken
Salt and black pepper to taste
6 Fresh cloves of Garlic
2 tablespoons olive oil
2 tablespoons butter
Potatoes and Onions for roasting
Preheat oven to 175 degrees C. Clean and trim chicken & place in a roasting pan Season generously inside and out with salt and pepper. Place garlic,thyme, onions and potatoes into the roasting pan and lightly cover with olive oil. Rub the butter on the chicken and add the remaining into the cavity. Roast uncovered 1 hour and 15 minutes in the preheated oven, to a minimum internal temperature of 80 degrees C. Remove from heat, and baste with melted drippings from the pan regularly. Cover with aluminum foil, and allow to rest about 30 minutes before serving.
